Thank you for coming to the Shamballa Café and Coffee Roasters' website, where we are dedicated to offering freshly roasted coffee that is good for a person, but also good for the world.

ill_1Consider this your invitation to personally visit the café located in Baldwinsville, NY, 25 miles northwest of Syracuse. Come in and enjoy a hot, freshly roasted cup of coffee, sample our wide variety of espresso drinks, munch on our delectable sweet treats, or cool off in the summer with our refreshing iced beverages.

Shamballa also offers a menu of delicious sandwiches that includes the Shamballa Panini (a large sandwich of artichoke hearts, roasted red peppers, Ramona’s Italian dressing, cheddar cheese grilled hot and served with tortilla chips), to name only one (see our full menu here). People say the Shamballa Panini outdoes any other Panini they have tasted.

We feature free WiFi throughout the café, and proudly display consignment pieces from local artists all along our walls. Music is another one of our passions, specifically our Thursday Open Mic nights and various other musical and community events.

ill_2Coffee that is freshly roasted has a fine taste that you can recognize anywhere.  Once you have had fresh coffee, you will not want to go back to buying your supply in a grocery store.  Owner Emmet Simpson roasts the coffee at Shamballa Café and Coffee Roasters.  Coffee is imported from many countries around the world.  We work to find the best beans for our customers and roast them perfectly.  Our roaster is a Diedrich drum roaster.  It works with convection as well as radiant heating.  Emmet uses roasting profiles to ensure each coffee is made to taste its best.

The coffee roasting process is fascinating.  The beans are truly a seed from a coffee cherry.  They are processed before being imported.  We buy caffeinated as well as decaffeinated green beans.  The decaf we buy is processed using the Swiss Water Process and no chemicals.  Our decaffeinated coffee tastes amazing.

Green beans are just that, green.  That is until they are put in a drum that is spinning at 400 plus degrees.  They change color dramatically from green to canary yellow then to cinnamon brown and eventually to dark brown.  There is a popping that occurs at around 380 degrees and again at around 415 degrees or so.  Aroma is the thing that makes coffee taste so good.  After the beans are roasted, they begin a degassing process.  Coffee is at its peak flavor between 4 and 25 hours after it is roasted.
